I recently read an article in a magazine about a restaurant in Iowa that serves bacon wrapped tater tots.

Well being the good Idaho girl I am, I love me some tater tots just as much as Napoleon Dynamite himself. So obviously I had to make some for myself.

I used Ore-Ida tater tots (duh) and D’Artagnan wild boar bacon (which I’ve been obsessed with since Christmas) for my experiment. The wild boar bacon actually turned out to be the perfect bacon for this project, because the strips are smaller and don’t overwhelm the tots.

I cut each piece of wild boar bacon in half and wrapped a piece around each tot. I placed them on a cookie sheet and baked them at 430 degrees for about 18 minutes.

The result was absolutely delicious and completely sinful. They would be fantastic with “special sauce” (ie mayo and ketchup mixed together), and also wouldn’t be bad with a pickle slice on top.

These would make a fantastic snack for an afternoon of watching sports or entertaining friends. Give them a try. You won’t be disappointed.
