Fingerling potatoes and garlic from Phoenix Public Market, jalapeno bacon from AJ’s, bok choy and scallions from my garden!
I don’t understand your website. I’m looking for a recipe for the Fingerling Potatoes.
It appears to be none.
I just bought your book and I am intrigued.
That’s because I was being lazy last night and didn’t post a recipe, just a photo.
Without getting into exact measurements since this is an easy recipe, just prepare how much you want of each item….I heated up some olive oil and browned some onions and garlic. Then I put the cubed potatoes in, covered the frying pan with a lid and let them cook for about 5 minutes, stirring occasionally to keep the potatoes from burning. I then drizzled about 1 tbsp of balsamic vinaigrette over the potatoes and cooked them for another 5-7 minutes.
I then sliced up the bok choy into bite sized pieces, along with the bacon (which had been cooked the night before – was using the leftovers for this dish), and tossed them into the frying pan with the potatoes. I covered again and let them all cook together for about 6-8 minutes, again stirring occasionally. And that’s about it! Very easy. If there are other vegetables you think might go well with the mixture, don’t hesitate to add more ingredients. This is kind of a “whatever is leftover in the refrigerator” sort of meal at the end of the week.
