My January “Bacon of the Month” arrived this week. And this month’s selection – Bear Creek Hickory bacon from East Texas – looks pretty darn tasty.

 

You’ll be seeing some of it highlighted here on Bacon Unwrapped as I take part in the “Meat Bracket” tournament being sponsored by The Carnivore Project starting next week. Of the 32 meats entered in the tournament, there are actually 2 entries for bacon. Maybe there will be a bacon vs bacon final…it could be even more exciting than March Madness. Stay tuned!
