Tapsilog is the Filipino term used when tapa (thinly sliced meat), garlic-fried rice (sinangag), and fried egg (itlog) are combined into a meal, served primarily for breakfast. The word tapsilog has spawned many other dishes, all containing some combination of meat, fried rice, and fried egg. I enjoyed baconsilog for breakfast in the Philippines on the island of Palawan at an adorable establishment called White Fence Country Cafe.
