Candied bacon seems to be very popular at the moment. It is popping up all over the place.
- The Boston Globe just published a recipe for making candied bacon with brown sugar and orange juice.
- A few weeks ago I wrote about Brick 29 in Nampa, Idaho, which features a really fantastic BLT made with caramelized bacon.
- I also recently highlighted a recipe for maple dijon glazed bacon that I found at Nook and Pantry.
- There was also my own experimentation with caramelized bacon a couple months ago. My brother and I coated strips of bacon with brown sugar that we then cooked on the grill.
- Here’s a link to another recipe for candied bacon that was posted on Epicurious earlier this year.
- And a quick Google search for “candied bacon” produces hundreds of other results such as this and this and this and this. Flavoring the candied bacon with pepper flakes or mustard is a popular variation.
Emeril deserves some credit for originally pushing the concept a couple years ago with his cayenne-candied bacon.
Seems like candied bacon is finally getting the respect it deserves.
