A colleague of mine just returned from a vacation in Ireland. While he and his wife were there, they encountered “Loin of Bacon” at a pub in Dublin called The Tram (the Guiness doesn’t have to travel far to get to The Tram since it is located just down the street from the factory).

Loin of Bacon – or Irish Bacon – is actually not the kind of bacon we Americans are familiar with. Irish Bacon is produced from pork loin (American bacon is usually cured from pork belly). Irish Bacon is sometimes referred to as back bacon.

 

Regardless of where it comes from, the pork product in this photo looks scrumptious (and I’ve been told it was one of the most delicious things consumed on the trip). So if you ever find yourself in Dublin, be sure to check out the Irish version of bacon at The Tram.
